Pint of Guinness

As a warm up to St Patrick’s Day, I have whipped up some Chocolate Guinness Cookies. And made them into little pints of Guinness!

I found the recipe here, I took the cookie recipe and added an extra 1/4 cup of cocoa because I wanted them quite chocolaty. I suggest if you do make these, just follow the recipe and don’t try to make them into roll-out cookies. I had to put the dough in the fridge to harden up to make it manageable and then again in between each rolling. The other problem is because they aren’t roll-out cookies, they rise and spread. Thankfully once the cookies cooled they weren’t so puffy which allowed me to add the royal icing.

The cookies also don’t last weeks like my usual sugar cookies, so they are required to be scoffed down in a few days. Usually not a problem for anyone I think.

This makes me miss having a really good Irish pub nearby. I love Guinness on tap! Bottles of it work fine in cookies and cakes but for drinking, it just doesn’t appeal to me.
